Sweet Basil Chicken

Difficulty: easy

Have you ever looked in your refrigerator and found a bunch of fresh basil going bad? Obviously not because that would require you having a working refrigerator. But hypothetically you have one that works and you are in this predicament, then I have a simple recipe for you. Sweet basil chicken, it is a recipe I made buy throwing things together and it tasted great. The honey sweetness compliments the subtle peppery flavor of the basil and your palate will thank you for not eating oatmeal for the fifth day in a row. Lets begin!

Ingredients:

500 grams chicken drumsticks, skin removed

0.5 tsp salt

0.5 tsp pepper

1 tbsp olive oil

0.25 cup honey

2 tbsp soy sauce

1 tbsp ketchup

3 cloves garlic, minced

2 tbsp fresh basil, chopped

Directions:

First cut incisions on the chicken to allow the marinate to seep into the meat. Mix all the other ingredients together.

Marinate the chicken will all these ingredients and set it aside for 3 hours in a Ziploc bag. If you do not want to waste a good Ziploc bag then just cover it. Preheat your oven to 350 degrees Fahrenheit and bake the chicken for 1 hour. Try to use a larger baking dish so the juices have more space to drain.

Take the chicken out of the oven and drain the juices in a bowl. Put the chicken back inside the oven and bake it for another 10 – 15 minutes or until the tops are golden brown. During this time, heat up a sauce pan and add the drained juices into it. Bring to a boil and allow for it to reduce, the honey will caramelized, this will be your serving sauce. Serve it with a side of stir fried vegetables. This dish will pair well with a light white wine, but I decided to have a crisp refreshing Diet Pepsi to give my liver a break.
